Blueberry Fritter Loaf Recipe
Cinnamon Brown Sugar Mixture
- brown sugar
- ground cinnamon
Blueberry Fritter Loaf
- sugar
- butter, softened (can use salted or unsalted, add a pinch ofsaltif desired)
- eggs
- vanilla extract
- all-purpose flour
- baking powder
- buttermilk or milk of choice, likewhole milkor almond milk
- fresh blueberries, frozen can be used as well
Old-Fashioned Creme Icing
- powdered sugar oricing sugar
- milk or cream- depending on thickness of glaze wanted
How to Make Blueberry Fritter Bread
- Preheat oven to 350 degrees. Use a 9×5-inch loafpanand spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
- Stirtogether the brown sugar andcinnamontogether in abowl. Set aside.
- In a largebowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
- Beat ineggs, 1 at a time, until blended in; add in vanilla extract.
- Combine &whiskthedry ingredientsofflourandbakingpowdertogether in anotherbowlthen gradually add theflour mixtureinto creamed butter mixture and mix until just combined.
- Mix buttermilk intobatteruntil just combined. Add blueberries andfoldin.
- Pour half thebatterinto the prepared loafpan; and then sprinkle half the brown sugar/cinnamonmixture on top ofbatterspreading it out
- Pour the remaining cake loafbatterover thecinnamon/sugar and repeat sprinkling with the remainder of the sugar/cinnamonmixture on top.
- Bakein the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
- To make vanilla icing, mix powdered sugar and milk or cream together until well mixed.
- Let cool for about 15 minutes on a cooling rack before drizzling with glaze if you want it to soak in. You can also drizzle with glaze after it’s cooled or do a dusting of powdered sugar on top!

- 1 teaspoon ground cinnamon

Pour half the batter into the prepared loaf pan; and then sprinkle half the brown sugar/cinnamon mixture on top of batter spreading it out
